Serves: 4-6 as an appetizer
Ingredients

4 cups watermelon, diced small (seedless or remove seeds)

1 small cucumber, diced small

1/4 small red onion, finely minced

1 jalapeño, seeded and finely minced (leave seeds if you want more heat)

Zest of 1 lime

Juice of 2 limes

1 tbsp honey (or to taste)

2 tbsp fresh basil, chopped

2 tbsp fresh mint, chopped

2 tbsp fresh cilantro, chopped

1/2 tsp kosher salt (adjust to taste)
Instructions

In a large bowl, combine the diced watermelon, cucumber, red onion, and jalapeño.

In a small bowl, whisk together the lime juice, lime zest, honey, and salt until the honey dissolves.

Pour the dressing over the watermelon mixture and gently toss to combine.

Add the basil, mint, and cilantro. Toss gently again so you don’t crush the watermelon.

Chill for 10-15 minutes before serving to let the flavors meld.

Taste and adjust seasoning with more salt, lime, or honey as needed.
Serving suggestion
Serve cold with Mi Nina jalapeño tortilla chips (or your favorite tortilla chips) for scooping. It’s also fantastic spooned over grilled fish, chicken, or shrimp!
