Chimichurri is a traditional Argentinean sauce made from a blend of fresh parsley, garlic, red pepper flakes, vinegar, and olive oil. Marinating chicken with chimichurri infuses it with a burst of vibrant flavors, creating a succulent and zesty dish that is sure to delight your taste buds.

Chimichurri-Inspired Marinade (or dressing!)

Ingredients:
¼ cup Rice Vinegar – we recommend Marukan
¾ cup Olive Oil – we recommend Olive Harvest
2 cloves of garlic
2 bunches of parsley – local from Bumbleroot Farm
1 big pinch of crushed red pepper
salt to taste
Method: 
Combine all ingredients in a bowl or blender an blend until combined, but still slightly chunky. This mixture does not need to be smooth.
We marinated chicken thighs from Commonwealth Farm for 1 hour in half of the Chimichurri and saved half to drizzle over the top. Serve with rice or alone.
Rosemont Tip!
This Chimichurri would make a delicious salad dressing. It’s herby & tart like a vinaigrette. Drizzle over local heirloom tomatoes and mozzarella for a fancy Caprese.
